Buttermilk Pancakes

Ingredients
1.0 large Egg, fresh, whole, raw1.0 cup Flour - Gold medal all purpose flour1.0 tsp Granulated Sugar1.0 tsp Baking Powder0.5 tsp Baking Soda0.5 tsp Salt1.0 cup Buttermilk, lowfat2.0 tbsp Butter, unsalted0.25 tsp Vanilla Extract
Directions
Use electric mixer on medium to beat eggs until frothy. Add buttermilk, melted butter and vanilla and mix well. Add the flour, sugar, baking powder, baking soda and salt, mix on medium until just blended.

Serving Size: 1/3 cup per pancake, 2 pancakes per person
