Sweet Potato Soup

Ingredients
1 cup, chopped Onions, raw 2 clove Garlic 1 stalk, large (11"-12" long) Celery, raw2 lbs Sweet potato 4 cup (8 fl oz) Chicken Broth 8 oz Almond Breeze Almond Milk, Unsweetened Vanilla Thyme, salt, pepper, rosemary, basil (preference in amounts) *can also use soy, coconut, etc. *can also use vegetable broth to make this recipe full vegan
Directions
In a large pot add 0 calorie nonstick spray. Add chopped onion, and celery and cook until soft, stirring occasionally. Add garlic and saute. Stir in diced sweet potatoes, thyme, other herbs and salt. Add 4 cups chicken. Simmer until sweet potatoes are easy to pierce. Puree soup until smooth. Return soup to pot and stir in 1 cup almond milk. Add salt and pepper to taste.
