Peanut Noodle Salad (Spicy)

Ingredients
1 Tbs Ginger, ground 2 Tbs unpacked Brown Sugar 1/2 cup Reduced fat creamy peanut butter 1 Minced Garlic 1/4 cup Rice Vinegar 2 Tbs Sriracha Hot Sauce 1/4 cup low sodium Soy Sauce14 oz Barilla Whole Grain Linguine, cooked 1 Large Raw Carrot 3 stalks Green Onion, chopped 1 Red Bell Pepper, cut in thin strips 1 yellow pepper, cut in thin strips 2 cucumbers, cut in thin strips with peeler1/4 cup peanuts, chopped 1/4 c Cilantro, fresh, chopped15 oz green beans, french cut, fresh or frozen (thawed)
Directions
- Cook linguine according to package directions, omitting salt
- In a large salad bowl, mix together noodles and vegetables.
- Whisk together peanut butter, soy sauce, rice vinegar, sesame oil, Sriracha sauce, ginger, garlic, brown sugar, and water.
- Pour over other ingredients; toss together.
- Cover and chill.
- Garnish with chopped cilantro and peanuts.
