Beet and Carrot Salad with Peanut Dressing

Ingredients
1 pound raw beets1 pound raw carrotsJuice of 2 limes (about 1/4 cup)8 tbsp Natural Peanut Butter (Dry Roasted Ground Peanuts) 1 tbsp Soy Sauce 0.167 tbsp Trader Joe's Toasted Sesame Oil 1 tbsp Honey 2 clove Garlic, minced or microplaned 1-2 Tablespoons microplaned fresh ginger0.33 tsp Salt (use 1/4 to 1/2 teaspoon, to taste)5 scallions, cleaned and finely slicedHot water (see instructions)
Directions
Shred or spiralize 1 pound each of peeled raw beets and carrots.

Combine remaining ingredients except scallions. Add hot water until the dressing becomes the consistency of heavy cream. Toss with shredded beets, carrots, and scallions.

Serve topped with a protein, or on its own.
