Suz's Vegetarian Chili

Ingredients

1/2 large red onion - cubed1 red bell pepper - cubed1 yellow bell pepper - cubed1 can red (kidney) beans - drained1 can black beans - drained2 cups tomato juice1 packet chili mix2 tsp light chili powder3/4 tbsp olive oil
cube 1/2 onion and bell peppers
place chili pot on medium heat and add about 3/4 tbsp of olive oil to pot and allow to heat for a minute or two
place veggies in pot and saute for approximately 2 to 4 minutes prior to placing beans in pot
drain both cans of beans and place in pot, stirring well with the veggies
add the dry ingredients prior to adding tomato juice and stir to mix well
add tomato juice and allow to come to a boil for about 2 minutes
place lid on pot and simmer on low-medium heat for 10 to 20 minutes
serve as you would any other chili...this is a great treat!
