Fluffy pancakes

Ingredients
1.0 cup Milk - Whole - 1 cup2 TBS white vinegar1.0 cup All-Purpose White Flour2 TBS Pure Cane Sugar Granulated White - sugar1.0 tsp Baking Powder0.5 tsp Baking Soda1.0 tsp Salt1.0 large Egg1.0 tsp vanilla
Directions
Mix the milk and white vinegar set aside. Then mix all the dry ingredients. I then take the additional time to separate the egg white and yolks then whip the egg white till medium peaks form. Next add vanilla and egg yolk (or whole egg if you aren't going to whip the egg white) to the now soured milk. Now add the wet ingredients to the dry and fold until just incorporated the batter should be lumpy. Next if you whipped the egg white fold that into the batter. Then heat up a medium sized skillet and maybe spray some cooking spray or butter or whatever onto your skillet and fry up the pancakes!
