8 large Egg, fresh, whole, raw 8 oz Cream Cheese 0.75 cup Super-fine blanched almond flour (2 tsp Baking Soda 0.5 tsp Cream Of Tartar 0.25 tsp. salt2 tsp. vanilla extract (optional)1 tsp. almond extract (optional)0.25 - 0.5 tsp. stevia drops (optional)Coconut or palm oil for cooking pancakes (not included in calculations).
Have cream cheese and eggs at room temperature. Blend until smooth in mixing bowl (immersion blender works well).
Add almond flour, baking soda, cream of tartar and salt.
Blend until smooth. Let batter sit about 10 minutes. Use medium temperature burner.
add small amount oil to skillet; when hot, use 1/4 cup batter per pancake. When golden, flip and cook briefly. These will burn easily, so watch the temperature.
Keep warm in oven while making remaining pancakes.
