turkey lentil meatloaf

Ingredients
1 cup Lentils 2 cups water1 serving Bouillon-Herb Ox Beef16 oz Turkey, ground turkey breast -99% fat free 2 cups shredded carrots1/2 cup, chopped Onions8 oz package mushrooms chopped1 cup Oats, Quaker1 tbsp Garlic, Crushed1.5 tbsp Extra Virgin Olive Oil 0.25 cup Egg whites1 14 ox can Hunts Petite Diced Tomato1 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend
Directions
• Boil water with bouillon. Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
• Saute onion, mushrooms, carrots and garlic.
• Drain and partially mash lentils.
• Scrape into mixing bowl and allow to cool slightly.
• Stir in oats and ground turkey
• Add egg whites, diced tomato and vegetables
• Mix well.
• Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased.
• Smooth top with back of spoon.
• Bake at 350 degrees for 1 hour and 15 minutes minutes until top of loaf is dry, firm and golden brown.
• Cool in pan on rack for about 10 minutes.
• Run a sharp knife around edges of pan then turn out loaf onto serving plate
