Breakfast Puffs

Ingredients
Puff:12 medium Egg, fresh, whole, raw 16 oz. cottage cheese16 oz. shredded cheese1/2 cup Unjury Protein Powder- Unflavored (2 scoops)1/2 cup Butter, melted1 tsp Baking Powder 1 tsp Garlic powder 1 tsp Salt 1 dash Pepper, black Filling:2 cup, pieces or slices Mushrooms, fresh 2 tsp Garlic 1/2 cup, chopped Onions, raw 1 tbsp "LouAna" Pure Coconut Oil *note that you can use any unflavored protein powder of your choice, and any filling that you would prefer, such as cooked bacon, tomato, etc. just recalculate using your choices*
Directions
In a skillet melt coconut oil over medium heat, sauté mushrooms until soft and liquid has evaporated. Add onions and continue to cook until translucent, adding garlic last. Cook until garlic is golden. Remove from heat and cool completely.

In a mixing bowl beat eggs well. Add in protein powder and melted butter, mix until combined. Add baking powder, garlic powder, salt, and pepper, mixing well. Next add cottage cheese and beat well until curds are small and distributed throughout mixture. Add the shredded cheese and mix to combine. *I usually do all this with my stand mixer only stopping it to add each ingredient* Make sure to scrape down the sides of the bowl. Finally add filling and mix until even distributed throughout mixture.

Spoon into prepared large muffin tins (I spray mine with Pam for baking)

Bake at 350 degrees for 25-30 mins. or until tops are golden brown.

Cool and enjoy!
