Couscous Salad with chicken, Tomato and Basil

1 T Extra Virgin Olive oil2 Garlic Cloves Minced1 Can Fat Free Chicken Broth1 1/2 Cups Uncooked Whole Wheat Couscous2 Cups Chopped Fresh Tomatoes2 Cups Cubed Cooked Chicken (about 2 breasts)1/3 Cup Thinly Sliced Basil2 T Balsamic Vinegar1/2 t Salt1/4 t Black Pepper1/4 Cup (1 oz.) Crumbled Fat Free Feta Cheese
Combine 1 tablespoon olive oil and garlic in a large microwave-safe bowl, and microwave at high for 45 seconds. Add the broth; microwave at high 4 minutes or until mixture simmers. Gradually stir in couscous; cover and let stand 5 minutes. Fluff with a fork. Stir in the tomato, chicken, basil, vinegar, salt, and pepper. Sprinkle with feta cheese.
