Flourless Banana Blueberry Oatmeal Muffins

Ingredients
2.0 large Egg, fresh, whole, raw0.5 tsp Cinnamon, ground1.0 tsp Vanilla Extract2.0 small (6" to 6-7/8" long) Banana, fresh1.0 cup Blueberries, fresh0.5 cup pieces or chips Walnuts0.33 cup, unpacked Brown Sugar2.0 Cup Woodstock 5 Grain Cereal
Directions
In a large mixing bowl, mash bananas with a fork. Slightly over-rioened banana work best. Stir in eggs, brown sugar, cinnamon and vanilla. Stir in oatmeal until completely moistened. Stir in walnuts and blueberries. Divide batter evenly into a 12 cup paper lined muffin tin. Pack batter into liners with the back of a spoon or fork before placing into oven. Bake at 425 degrees for 15 minutes. Remove muffins from tin and cool on wire rack. Store refrigerated. Serving Size: Makes 12 regular sized muffins
