lemon curd and cream croissants

Ingredients
160ml thickened cream1 X 200g pkt butter croissants215g bought lemon curdicing sugar mixture to dust
Directions
use a balloon whisk or an electric beater to whisk the cream in a bowl until firm peaks form. Use a serrated
knife to cut each croissant in half horizontally. Spread the lemon curd over the cut sides of the croissants. Spoon the cream over the bases. Top with the remaining croissant. Dust with the icing sugar mix to serve. Serves four.
