Chicken Croquettes (Prudence Penny)

2 boneless, skinless chicken thighs cooked and shredded1 cup milk1/4 c butter1/4 c flour1/4 tsp salt1/8 tsp pepper1 egg2 tbsp water1/4 c flour1/2 cup bread crumbs
Thick White Sauce:
Melt butter in pan add flour and whisk until smooth, cook 1 min. Slowly whisk in milk. Bring to a boil, reduce heat and cook 3 min. Add salt and pepper. Add chicken and then cover with plastic wrap. Refridgerate 2 hours. Make egg wash by beating egg with water.
Croquettes:
Scoop chicken mixture out by tbsp. coat with flour and shape into ball. Drop into egg wash then rool in bread crumbs. In a pan with hot oil fry until golden brown. Drain croquettes then eat. Makes 10 2 inch balls.
