Ingredients
1 sweetpotato, 5" long Sweet potato 1 serving Chopped Onion (2 tbsp/1 serving) .25 cup Bell Pepper, Red - 1 Cup, Chopped (by 16HEATHER) 1 serving Garlic, cooked (1 clove / serving) 1 serving Eggs (Overeasy) .5 cup baby spinach and baby arugala (by AGGIEJEN03) 2 tbsp Extra Virgin Olive Oil
Directions
dice potato, bell pepper, onion, garlic and saute in olive oil.
cook egg as you like
add baby spinach & arugala to wilt at the end.
