Veggie Stuffed Chicken Breast

Ingredients
4 Boneless, skinless chicken breasts1 zucchini, sliced thin3 tomatoes, sliced thin2 Yellow Bell Peppers1/2 Red Onion2 tbsp Extra Virgin Olive Oil1 cup, shredded Mozzarella Cheese1 tsp Italian seasoning Kosher saltBlack Pepper
Directions
Make slits in chicken and stuff with vegetables. Drizzle with olive oil & Italian seasoning, salt, and pepper. Sprinkle with mozzarella. Cook at 400° for 25-30 minutes.
