Roasted fennel potato salad

Ingredients
1 bulb Fennel 2 cup, shredded Radicchio 1 large (3" to 4-1/4" dia. Baked Potato, with skin 1 medium (2-3/4" dia) (approx 3 per lb) Apples, fresh with skin 3 cup Spinach, fresh 0.5 cup pieces or chips Walnuts 6 tbsp Parmesan Cheese, shredded 1.5 tbsp Olive Oil
Directions
Roast potatoes, fennel, & radicchio Chop the spinach & apples Toast the walnuts Throw the whole thing together and mix Yum!
