2 large (3" to 4-1/4" dia. Baked Potato, with skin 6 oz Mozzarella Cheese, whole milk 2 tbsp Canola Oil 3 large Egg, fresh, whole, raw 4 clove Garlic 1.5 tsp Salt 1 dash Pepper, black 3 tbsp Parsley, dried 1 cup Bread crumbs, dry, grated, plain 3 tsp Grey Poupon Dijon Mustard
1.In a pot, boil water then add the potatoes with a pinch of salt. then bring to a simmer over moderate heat until cooked. once it is cool mash them in a bowl.
2.add in the mozzarella and parsley and season with salt and pepper.roll the mixture into 8 oval croquettes and transfer to a plate.
3.Spread the bread crumbs in a bowl. In another bowl, beat the eggs with the mustard, garlic and a pinch each of salt and pepper. Dredge the croquettes in the bread crumbs.
4.Dip the croquettes in the beaten egg mixture to coat, then dredge again in the bread crumbs,
5.In a large pan, add oil and fry the croquettes, turning, until golden and crisp.
