Szechuan stir Fried veggies

Ingredients
1 cup, strips Carrots 1 stalk Celery, sliced 1 cup, sliced Onions1 cup, strips Green Peppers 30 Sugar Snap Peas, about 1/2-1 c, sliced 4 tsp Canola Oil2 stalks Green Onion, sliced diagonally1/2 c Szechuan Sauce
Directions
Slice all veggies. Saute in about 4 batches, adding 1 tsp oil each time. If desired, also saute a little extra minced garlic and ginger.
When done, stir all back together with the sauce, If necessary add a little water to help mix everything together then cook to reduce a bit.
I used my homemade Szechuan sauce recipe.

Serving Size: Makes about 4, 1-c servings.
