Orange Truffle Sauce

Ingredients
1/2 cup table (coffee) cream (18%)2 tsp orange zest6 oz premium white chocolate (not chips), broken up 2 tbsp salted butter
Directions
Combine cream and zest in a small pot and bring to just below a simmer, stirring.
Remove from heat and steep 10 minutes, strain.
In a double boiler over simmering water, combine white chocolate and butter until melted and looking slightly grainy.
Stir in warm, strained cream and cook 1 minute, stirring.
Allow to cool before bottling and storing in the fridge.
