Ingredients
453 gram(s) Potatoes, Dice (Simply Potatoes) 2/3 c. 368 gram(s) Lean Turkey Polska Kielbasa (Fit & Active - Aldi) 1 cup, chopped Onions, raw 3 tsp Dijon Mustard (Great Value) 2 tbsp Cider Vinegar 4 cup Spinich, Fresh Express 3 serving Bacon Bits (oscar mayer real bacon bits) 1 serving brown sugar substitute (by 2BEINSIDEOUT) .5 tbsp Extra Virgin Olive Oil
Directions
Cube potatoes into casserole bowl with lid. Add 1/3 cup water and microwave on high 6 minutes or until tender. In a large skillet, heat olive oil. Brown onions and sliced kielbasa. Drain and add potatoes, cook and stir for 3-4 minutes. In small bowl, mix brown sugar, mustard, vinegar, thyme and pepper, stir into skillet, bring to a boil, reduce heat and simmer for 5-7 minutes. Add spinach and bacon bits. Cook just till spinach is wilted.
