20.0 oz *93% Lean ground beef1.0 cup, chopped Carrots, raw1.0 cup Peas, frozen0.5 serving Milk Reduced Fat Milk 2% Great Value ( 1 cup serving)1.0 large Egg, fresh, whole, raw4.0 cup Idahoan Buttery Homestyle Instant Mashed Potatoes (prepared)0.12 cup Flour, white1.5 cup College Inn Chicken Broth - 99% Fat Free1.5 tsp Salt6.0 tbsp Butter, unsalted2.0 tsp Lea & Perrins, Worcestershire Sauce0.12 cup Tomato Paste
Make the mashed potatoes minus 1/2 cup water. Mix egg into milk. Add 4 tbs butter, and milk mix to potatoes and set aside.
Preheat pan. Melt 2 tbs butter and saute carrots (original recipe called for onions also) with salt until soft. Brown the beef. Add tomato paste and any additional seasoning (salt, pepper, Penzey's Justice & dry thyme). Cook 1 minute. Add flour, stir until combined. Stir in Worcestershire and broth. Simmer 10 minutes. Turn off heat, preheat broiler. Stir in peas. Top with mashed potatoes. Broil 5-10 minutes until you get lovely brown peaks.
Let stand 10 minutes before serving.
