Zucchini Pizza

Ingredients
4 cups zucchini grated2 TBSP gluten free rice flour3 lg eggs (beaten)1 cup grated parmesan cheese6 oz grated mozzarella1/4 - 1/2 cup ragu sauce (top of zucchini after it bakes)
Directions
combine all ingredients into large bowl

place in shallow cooking dish sprayed w/ PAM

bake 30 mins at 400 degrees (top should be browning, especially the edges)

spoon on tomato sauce

turn off oven and let sit for 5-10 mins

    this was good. I changed it, put zucchini, rice flour, egg whites and parmesan cheese in a bowl mixed, pressed it to the bottom of a pizza pan & added garlic. cooked till edges were brown and then put the sauce and the remaining cheese on top. I put small pieces of leftover grilled chicken on top. - 3/23/10
