Keto Cheese Quiche

Ingredients
1 tbsp Olive Oil .5 s Spanish Onion 40g Cheese Slices, Havarti - Coles (20g/slice) .75 medium whole (2-3/5" dia) Tomatoes2 tsp Dijon Mustard 1.5 cup Bob's Red Mill Almond Meal/Flour60g Butter, salted 1.5 extra large Egg, fresh, whole, raw 125g Pura fresh cream (by ERCOLE@) 25g Cheese - Wensleydale Tasty (28g/1 oz) 1 large Egg Yolk
Directions
Mix almond meal, butter and egg yolk with a little water to a pastry. Easier to press into greaseproof-lined pie dish than to try to roll out. Blind bake at 180 C. Fry onions in olive oil to caramelised point. Line pastry base with onions, grate cheeses over and top with tomato slices, beaten mix of eggs and cream
