18 spear asparagus, chopped2 cup broccoli, chopped2 cup carrots, chopped2 cup celery, chopped2 cup fresh mushrooms, chopped1 bell pepper, diced4 Aidells Chicken Sausage - Roasted Garlic & Gruyere Cheese links2 sweet potato, chopped1 cup dry quinoaWater
Prepare sausage to package directions in separate pan. Dice all veggies. Roast sweet potato, asparagus and carrot in oven at 350 - 375. Sauté pepper and mushroom in Dutch oven in cooking spray on stove top. Stir in broccoli. Add quinoa and water to Dutch oven and cook 15 minutes. Chop sausage into pieces and add to quinoa mixture. Stir in roasted veggies and serve.
