Pancit with bean thread noodles

Ingredients
Bean thread noodles (mung bean), 4 cup (1 package)Carrots, raw, 1 cup, grated Celery, raw, 1 stalk, large, sliced thinlyChicken Broth, fat free, 3 cups Onions, raw, 1 cup choppedGarlic, 4 clove minced*Kikkoman Lite Soy Sauce, 1/4 cup Chicken Breast 1.5 breasts, bone and skin removededamame, shelled, 1 cupmushrooms, 1/2 cup chopped
Directions
Soak noodles in warm water for 5 minutes, then cut to desired length. Drain and set aside.

Saute onions and garlic in olive oil for 2 minutes in a large pot.

Add chicken and cook until no longer pink.

Add the rest of the vegetables and chicken broth and bring to a boil, then reduce heat to low and add noodles. Stir. Add soy sauce, stir and let noodles soak up liquid.

Add salt and pepper to taste. I have heard some add lemon juice to taste, as well.
