Zucchini bread...reduced

Ingredients
2 eggs1 tbsp ground flax simmered in 3 tbsp water2 cps sugar3 tsp. vanilla.5 cp unsweetened applesauce.5 cp veg or canola oil~mix above and set aside1 tsp salt1 tsp cinnamon1 cp whole wheat flour2 cp white flour1 tsp Baking soda.5 tsp Baking powder~stir then mix with wet ingredients aboveadd2 cp grated unpeeled zucchini.75 cp chopped walnuts.75 cp chopped apple
Directions
Preheat oven to 325

Spray loaf pans with Pam
large loafs; 60-75 min
small loafs; 55-65 min
They are done when the batter begins to pull away from sides.

I made mini muffins. They took about 20 min and were perfect.
The kids & hubby love them.
Next time, I will only use 1.75 cp of sugar and will use 1.5 cps each of wheat and white flour.
