Crockpot Chicken Ratatouille

Ingredients
2 skinless chicken breasts- 1 inch pieces3 med. yellow sqaush- sliced3 med. zucchini- sliced2 fresh tomatoes- diced26 oz jar marinera1 sm. red onion- thinly sliced1 bell pepper- choppeditalian seasoningsaltpepper
Directions
Makes 8 1 cup servings
Cut your vegetables and chicken. Put all ingredients in the crock pot. Cook for 6-8 hours on low. Serve with polenta.

    My husband is not a major force in the kitchen and he made this recipe for us. It's cheap, it's easy, and it's absolutely DELICIOUS! Serve over brown rice. We're thinking of adding green chile next time for a little spice, but it's great as it is, too. - 10/2/08
