Keto Stuffed Peppers with Cauliflower Rice

6 Medium Green Bell Peppers1 pound Lean Ground Turkey 1 tbsp Extra Virgin Olive Oil 2 cups Cauliflower Rice 1/2 cup, chopped Onions, raw .25 cup Tomato Sauce 1 tsp Oregano,2 cloves garlic, minced salt and pepper to taste
Cut tops off peppers and remove membranes and seeds. Cook onions in olive oil in large pan until soft and slightly browned. Add garlic, oregano, salt , pepper and ground turkey and cook until no pink remains. Add tomato sauce and cauliflower rice and continue cooking 2 of 3 minutes. Add salt and pepper to taste. Divide stuffing evenly into peppers, place in casserole dish sprayed with cooking spray. Cover tightly with aluminium foil and bake at 375 for 30 - 40 minutes. Uncover and bake a further 10 - 30 minutes.
