1.0 fl oz Lemon Juice1.0 clove Garlic0.25 cup, chopped Onions, raw3.0 medium (4-1/8" long) Scallions, raw1.0 tbsp Parsley1.0 cup, chopped Green Peppers (bell peppers)1.5 tbsp Extra Virgin Olive Oil1.0 cup Ancent Harvest's Quinoa, Traditional, Organic (1/4 cup dry / 46 grams)0.25 cup Pumpkin Seeds (whole seeds, roasted)
Cook quinoa per package instructions. Dice peppers. Dice garlic to small pieces. Add peppers, garlic, parsley, lemon and olive oil together. Add roasted pumpkin seeds and quinoa. Fold all together.
