4 Boneless pork chops (about 4 oz each), trimmed2 Tbs Honey2 Tbs Spicy brown mustard1/3 C crushed butter-flavored crackers (about 8 crackers)1/3 C dry bread crumbs1 TBS vegetable oil1 TBS Butter
Flatten pork to 1/8 in. thickness. Combine honey and mustard; brush over both sides of pork. In a shallow bowl, combine crackers and breadcrumbs; add pork and turn to coat.
In a skillet, heat oil and butter. Fry pork for 2-3 minutes on each side or until crisp and juices run clear.
