Tofu Quiche with Broccoli

Ingredients
1 ready made pie crust1 medium onion, chopped finely3 cloves garlic, minced1 lb of broccoli (you could also use spinach)1 lb firm tofu1/2 cup soy milk2 tablespoon vegan soy parmesan cheese1/4 teaspoon ground nutmeg (cinnamon works also)3/4 teaspoon salt1/2 teaspoon ground red pepper1 tablespoon mustard
Directions
Pre-cook pie shell for 12 minutes. Keep oven on @ 400.
In a skillet cook the onion and garlic in oil until transparent. Add the broccoli (or spinach) and cook until just soft. In a blender, puree tofu, soymilk, mustard, salt, nutmeg, pepper, and soy cheese until smooth.
Pour into a large bowl and add veggies and mix well. Pour into pie shell and bake for 35-40 minutes or until quiche is set. Allow to sit for 5 minutes before slicing.
