Welsh Cakes

Ingredients
50 grams Butter, unsalted 25 grams Lard 75 grams Granulated Sugar 75 grams Raisins 1 large Egg, fresh, whole, raw 0.3 serving (150ml) Semi Skimmed Milk 200 grams Flour, white
Directions
Rub the butter and lard (or margarine) into the flour to fine breadcrumb state. Add the other dry ingredients and stir. Add the egg beaten and 2 tbsp milk. This will make a dough similar to shortcrust pastry. Roll out to 1/4" on a floured surface. Cut into rounds. Cook on a non-stick griddle or heavy base frying pan for about 3 minutes each side. Sprinkle with a little extra sugar if you feel the need.
