Egg Muffin

Ingredients
3 large Egg room temperature2 tbsp chopped Scallions1 clove Garlic chopped0.2 cup, shredded Mozzarella Cheese1 slices Cured beef (smoked)1 serving Button Mushrooms (chopped)2 mushrooms Shiitake Mushrooms (chopped)1 tsp black pepper 1 dash Salt 0.5 cup fresh Spinach (chopped)
Directions
1) Crack eggs in a mixing bowl and whisk it, then add pepper and salt whisk it again. Next add scallions, garlic, mushrooms, spinach and cured beef. Mix all combine together nicely.

2) 3/4 of the mixture into silicon baking muffin cup. this mixture can fit to 5-6 muffins cup. After that sprinkle some mozzarella cheese on top and bake in the preheat oven 220 c for 10 minutes.

3) This healthy muffin can be served hot and as breakfast too.
