.75 cup Rice flour, white .25 cup Yellow Cornmeal .5 tsp Salt .33 cup Butter, unsalted 1.5 package (10 oz) Spinach, fresh .5 cup, chopped Onions, raw .75 tbsp Extra Virgin Olive Oil 4 oz Feta Cheese 1 large Egg, fresh, whole, raw 1 tsp Oregano, ground 1 clove Garlic .3 cup Buttermilk, lowfat
Preheat oven to 400 F. Combine rice flour (I uses "cup for cup" GF flour, you can also use all-purpose, or whole wheat pastry flour), cornmeal, salt. Add butter and cut in with pastry blender or food processor, until butter is in tiny pieces, add butermilk and stir just until dough comes together. Transfer to work surface and knead lightly just until mixture is cohesive, flatten into 8 inch circle. Cover & Refrigerate 2-48 hours. Put olive oil in skillet, add onion and garlic cook until softened slightly, add spinach. cool mixture. Put in strainer and press out additional liquid. Put mixture in large bowl. Add feta, beaten egg, oregano, salt & pepper. mix until combined. Set aside (can refrigerate filling up to 2 days). Remove dough from fridge. Roll on flour-dusted parchment to a 13-inch circle. place parchment and dough on baking sheet. Put filling in center of dough, spread, leaving 2 inch border, fold up edges over mixture in rustic, galette style. Brush crust with additional buttermilk or egg wash, if desired, top filling with additional feta cheese, if desired. Bake at 400 degrees about 25 minutes, until golden brown.
