Vegan Coconut Chocolate Chip Cookies

egg replacer equal to one egg1/2 cup vegan margarine3/4 cup sugar1 tsp vanilla extract1 1/4 cup flour1/2 tsp baking powder1/2 tsp baking soda1/4 tsp salt1/2 cup shredded coconut, unsweetened3/4 cup vegan chocolate chips
Preheat oven to 350F(175C). In food processor blend together the egg replacer, margarine, sugar, and vanilla until smooth. Set aside. In a large bowl, stir together the flour, baking soda, baking powder, salt, coconut, and chocolate chips. Add the margarine mixture and stir together until well incorporated. Roll dough into balls, lay on cookie sheet, and bake 10-12 mins. Let cool 5 mins. before removing from cookie sheet. Makes 18-24 cookies.
