One Dish Garlic & Herb Roasted Pork

0.25 tsp Pepper, black 0.50 tsp Salt 1.50 medium (2-1/2" dia) Onions, raw 3 medium (2-1/4" to 3-1/4" dia.) Potato, raw 16 oz Pork - No Name Boneless Pork Loin Chops 4 Cup HEB Broccoli Normandy Blend 1.5 tsp Garlic powder 3 tbsp Olive Oil 1.5 tsp Onion powder 2.5 tsp Mrs. Dash (R) Italian Seasoning Blend
Preheat oven to 425 degrees F.
Spray a large (about 9x13-inch) baking dish with cooking spray.
In a large bowl, toss or mix together potatoes, onion, and Normandy Blend Vegetables, 2Tbsp. olive oil, 2 tsp. Italian Seasoning, 1 tsp. Garlic Powder, 1 tsp. Onion Powder, 1/4 tsp black pepper & 1/2 tsp. salt until everything is completely coated.
In a large zip-top bag, place the pork, 1 Tbsp. Olive oil & 1/2 tsp garlic powder, 1/2 tsp onion powder & 1/2 tsp Italian Seasonings and toss until meat is coated.
Arrange vegetables in the bottom of the prepared dish. Place pork on top. Cover with Foil & Vent with a fork.
Put dish in the oven and roast for 30 minutes. Remove from the oven and take off foil. Roast for another 10 minutes or until pork is cooked through (and thermometer reads 145 degrees F). Smaller tenderloins may need less time, so check the pork at the 20 minute mark and adjust time accordingly.
Allow pork to rest for 5-10 minutes before serving. Garnish with fresh herbs, if desired.
