2 12-oz bags Great Value Black Eyed Peas, frozen1 tbsp Extra Virgin Olive Oil 1 cup, chopped Onions, raw 1/2 cup, diced Celery, raw 1/2 cup, chopped Green Peppers (bell peppers) 3 tsp Garlic, minced 4 cup O Organics Vegetable Broth1/2 tbsp Salt 1/2 tsp Pepper, black 1 tsp Low Sodium Soy Sauce 1/2 tsp Poultry seasoning 1/2 tsp Colgin Liquid Smoke1/4 c Anderson's Organic Pure Maple Syrup
Directions:
Heat oil in a large pot.
Add in onions, celery, garlic, and green pepper and allow to cook for four minutes.
Next, stir in black eyed peas, vegetable stock, salt, pepper, poultry season, liquid smoke, soy sauce, and maple syrup.
Allow to boil for one minute, then reduce to a simmer for 40 minutes until peas are tender. Be sure to stir occasionally.
Serve hot over rice or, quinoa
