Ingredients
4 serving Minute Rice Instant Enriched Long Grain White Rice (1 cup serving size) 1 large Pepper, sweet, red, fresh 1 large Onions, raw 2 stalk, large Celery, raw 2 large Carrots, raw 1.25 cup enchilada sauce, Old El Paso, Green chile (1 can) 1.75 cup hunts no salt diced tomatoes basil onion garlic 12 oz Shrimp x-large frozen cooked Wal-Mart peeled 7 serving Hillshire Farm Turkey Polska Keilbasa 1 tbsp garlic, minced in a jar, Great Value 2 tsp Chili powder 1 cup (8 fl oz) Water, tap
Directions
Spray large pot w/olive oil pam spray...saute dieced onion, carrots, celery & red pepper. Add tiny bit of water, cover & simmer til soft.

Slice keilbasa in thin slices (I boil mine to get rid of some of the sodium). Drain & set aside.

Add 1 can of Green Enchilada Sauce & 1 can of Hunts NO SALT Diced Tomatoes w/Basil, onion & garlic to cooked vegetables in pot. Add about 1/2 cup water to each empty can & swirl around & add to pot. Add minced garlic. Add Chili Powder to taste.

When heated to desired temp...add cooked shrimp & keilbasa.

Add cooked rice & stir well.
