Potato Chip Salmon

Ingredients
Salmon 4 fillets 4oz eachPotato Chips, 100 Calorie Pack Mustard Coarse Ground, 3TBSPParmesan Cheese, shredded, 3 TBSPBlack Pepper to taste
Directions
Crush potato chips and mix with parmesan cheese and black pepper. Pour out onto a plate.
Spread mustard on top of each salmon fillet.
Press mustard side of salmon into potato chip topping.
Place fillets into baking dish lined with wax paper or non-stick foil. Alternatively you may spray the baking dish with cooking spray but that is not accounted for in the calories.
Bake at 425F/210C 12-14 minutes or to desired doneness.
Makes 4 4-ounce servings.
