Sweet Kugel with Shirataki Noodles

Ingredients
1/2 pkg (or 4 oz) tofu shirataki noodles1/2 peach, cut into bite sized pieces1/4 C fat free cottage cheese1 T Splenda1 T egg whitescinnamon to taste
Directions
Peheat oven to 425 degrees. Drain, rinse, pat dry and cut noodles.
In an oven-safe baking dish, combiine noodles, egg white, splenda, peach, cottage cheese and cinnamon. Mix well.
Bake for approx 25 minutes or til firm.

    I used Organic Zero instead of Splenda and also crumbled some Fiber One on top. It took way longer and had to cook at a much higher temp. The liquid didn't want to dry up and it wouldn't really solidify... but fairly tasty. - 4/18/09
