2 8oz FF cream cheese1 cup frozen mixed berries, thawed and drained1 cup splenda2 TBS vanilla extract48 Nilla Wafer cookies1 Tub Cool Whip
Mix room temperature cream cheese, vanilla, and Splenda together until well blended. Add in smashed mixed berries and blend. Fold in tub of Cool whip. Spoon into mini muffin pans(pre-sprayed with PAM) and top with Vanilla Wafer. Cover and refridgerate for 2 hours or until set.

This is absolutely delicious! I made some for a tea party I'm going to tonight. Really simple to make and tastes great. I used 3/4c Truvia instead of Splenda and 1/2 tub of Cool Whip Free instead of a full one and topped with fresh raspberries. I'll definitely make these again in different flavors! - 7/1/11
