zucchini casserole

Ingredients
2 pounds fresh zucchini1- 8 ounce package light cream cheesepinch of garlic powder1/2 cup grated parmesan cheese
Directions
Pre-heat oven to 350 degrees. Wash and slice zucchini, boil until just done, but not mushy. Drain zucchini well. Using an electric mixer, beat zucchini with cream cheese and garlic powder until well blended. Pour into 8" x 8" pan that has been sprayed with non-stick cooking spray. Sprinkle with parmesan cheese. Bake about 20-30 minutes until top is golden brown.
