Ingredients
4 fl oz Lemon Juice 4 large Egg, fresh, whole, raw .5 cup Butter, unsalted 16 tbsp Wholesome Organic Erithritol - Zero Sugar (12g) 24 serving Truvia Brown Sugar Blend (4g)
Directions
Lemon juice amount is approx to 3 lemons juiced. In a food processor pulse the sugar and 1 T lemon zest (if you use real lemons, need zest of all 3 lemons, otherwise just process sugar). Add butter and process thoroughly. Then add 1/2 c lemon juice, sale and eggs one (1) at a time until combined. Pour mixture into a 2-qt sauce pot on store top and heat on medium-low, stirring until it begins to simmer and thicken. Remove from heat when it reaches 170 degrees on a candy thermometer (this takes ~8-10 minutes). Serve warm on you favorite baked goods or chill and serve as desired. Store in a tightly sealed container in refrigerator for up to 1-2 weeks.
