Low Carb Shrimp Diablo

Ingredients
4 ounces Mushrooms 1 medium Onion2 stalks Celery1 medium Bell Pepper1 Jalapeno Pepper1 Tbsp Italian seasoning1 tsp Lemon juice3 cloves Garlic1 Tbsp Olive oil28 oz can diced tomatoes, drained1 lb large Shrimps
Directions
Chop mushrooms; set aside. Chop onions; set aside. Chop celery; set aside.
Remove the stems, pith and seeds from the green bell pepper and the jalapeño. Chop peppers and set each aside separately.
Mince garlic; set aside. Pat dry the shrimp with paper towels and set aside.
Add olive oil to a large sauté pan over medium-high heat. Add the onion, celery, and green bell pepper. Sauté until soft, about 4 minutes. Add the garlic and sauté until fragrant, about 30 seconds. Add the italian seasoning, diced tomatoes and mushrooms. Reduce the heat to medium and simmer until the sauce thickens slightly, about 5 minutes.
Add shrimp, lemon juice and jalapeño to the pan. Simmer until the shrimp turn pink, about 4 minutes.
Divide the shrimp Diablo among 3 bowls and enjoy.
