Paleo Fig Rolls

Ingredients
Filling221 grams figs, dried, (slightly more than a cup)1 tbsp orange zest1 tbsp Orange Juice 2 tbsp Honey pinch of salt1 tsp Pumpkin Pie spice 1 cup blanched almond flour 0.25 cup Coconut Flour0.25 cup Tapioca Flour 1 large Egg, fresh, whole, raw 2 tbsp Honey pinch of salt4 tbsp Butter0.5 tsp xanthan gum, optional
Directions
Soak figs in hot water for five minutes. Then cut off hard stem, chop in quarters and put in food processor. Add other ingredients to food processor and pulse until desired consistency.

Clean out processor and add dry ingredients; pulse to mix. Add butter in chunks to processor and pulse until evenly distributed. Add egg and honey and mix again. Chill mixture in fridge for 30 minutes. Divide mixture into four equal parts. Roll first one out to approx. six inch by three inch rectangle on a piece of wax or parchment paper. Put one-fourth of filling in a line down the middle. Fold side nearest to you over and roll the roll closed. Cut into six equal pieces. Repeat with remaining three. Bake at 350 F. for 20-25 minutes, rotating baking sheet halfway through. Rolls should brown at the edges and be golden in the middle.
