Grilled Spinach Feta Egg Breakfast Wrap

Ingredients
1/3 c. Eggbeaters1 tbsp. Sun-dried tomatoes in olive oil1/2 c. Spinach, fresh1 oz. President Fat Free California Tomato and Basil Feta Cheese1 Azteca Buena Vida Medium Whole Grain TortillaCooking spray
Directions

Use two skillets - one small and one medium. Coat the medium skillet with cooking spray and add eggs. Cook them through and make them into a small rectangle shape. When eggs are done cooking, remove them from skillet onto plate.

In the small skillet, add sun-dried tomatoes in oil and spinach and cook until spinach is wilted. Then add the feta and heat until it's somewhat melted.

Back in the medium skillet add some more cooking spray and then grill the tortilla lightly and add egg to middle of tortilla. Take the tortilla with egg out of skillet and add the tomato-spinach-feta mixture on top. Then wrap the tortilla like an envelope with side in first then fold over top and bottom. Return wrap to skillet and grill lightly on each side until warmed through.

    Hungry Girl specifies a different tortilla, which is where the reduction in calories, fat and carbs come from. The La Tortilla brand they use is sometimes hard to find, and pretty expensive. I think the extra calories are good for breakfast, anyway - they start your day! =) - 2/5/11

    I simplified this recipe a bit but it turned out very tasty. I mixed the chopped spinach with the egg whites and cooked in a small skillet omelet style. When done, placed in a small tortilla, sprinkled with the feta cheese and folded in half. Had fresh tomatoes on the side. Had no tomato in oil. - 9/23/09

    I make a couple on Sunday then put in the fridge...then warm them up via microwave for breakfast during the week.
