Ingredients
16 oz Organic Valley Ground Chicken, Frozen 2 cup Brown Rice, short grain (3/4 cup cooked) (by JADEESMJK) 32 tbsp Tomatillo Salsa (by MARTHAM) 240 gram Cheese, Cheddar, Sharp White, Shredded, SR (by DLROSE51) 1 tsp Cumin - ground (1 tsp) (by INFORM555) 16 tbsp Chopped Green Chiles (by MAB1116) 3 serving Chopped Onion (2 tbsp/1 serving)
Directions
Cook and cool the rice. Char, peel, and dice the chiles (I use poblano). Mix raw ground chicken with onions, seasonings, and 1/2 of the cheese. When the rice is cool, and peppers cooled after charring, mix in with chicken mixture. Form into 4 oz loaves. Top with 12 oz of salsa verde. Bake at 350 for 40 minutes. Remove from oven, top with remaining salsa and cheese, and broil for 4-5 minutes (until tops are bubbly and slightly browned).
