Oat Bran Blueberry Muffins

1/2 c brown sugar, packed1 1/2 c Oat Bran Cereal3/4 c Whole Wheat Flour1/2 c Unbleached White Flour1/4 Premier Nutrition Soy Protein Powder - Vanilla2 tsp baking powder1 1/2 tsp baking soda1/2 tsp salt2 eggs or 4 egg whites3 small mashed bananas2 Tbsp. vegetable oil1/2 c non-fat milk1/2 chopped walnuts1 cup frozen blueberries
Preheat oven to 400 degrees F. Line 12 muffin cups with paper liners or grease muffin cups.
Blend together dry ingredients. Add eggs, mashed bananas, vegetable oil, milk, walnuts and blueberries. Mix until well-blended. Let stand 15 minutes. Pour into muffin cups.
Bake 15 minutes or until golden brown.
