5 Bean Salad

1 cup yellow snap beans1 cup green snap beans1 cup red kidney beans1 cup black beans1 cup garbonzo beans (chickpeas)1 cup chopeed green bell peppers1/4 cup chopped onion2/3 cup cider vinegar1/3 cup (6 tbsp) extra light olive oil1/2 cup sugar 1 teas. salt
Mix all ingredients together in a large bowl with a cover and refrigerate overnight before serving to allow flavors to mix. Serving size 1/2 cup.

I altered this a bit - forgot the garbanzo beans so left them out and used whole cans of beans which I drained and rinsed to lower sodium. I love balsamic vinegar which I used instead of the cider and since it is sweeter to my taste I added less suger (splenda, 1 Tbs) - It tasted great to me. - 6/20/09

Thanks for the ideas. I will try replacing the sugar with something else, too.
