Egg Foo Yung Sandwich

Ingredients
1 eggsalt and pepper1/4 C bean sprouts1/8 C green onion, chopped1 T yellow onion, slivered1/4 tsp soy sauce1/16 tsp corn starch1/4 tsp sesame oil1/4 C cooked chicken or cooked shrimp, chopped2 slices low fat bread or a pitadash of oil1 leaf lettuce2 slices tomatoes1/2 tsp fat free mayonnaise
Directions
In a small bowl, whisk together egg, salt and pepper. Whisk together the soy sauce with corn starch on a small bowl. Heat a small bit of oil in skillet and saute the vegetables over mediuim heat til cooked through. Set aside to cool. When cool, combine the cooked vegetables, soy sauce mixture, sesame oil, and chicken or shrimp to the beaten egg. Mix well. Heat a bit of oil in skillet then pour mixture into pan. When the underside browns, flip and brown the other side. Serve patty on bread or in pita, with lettuce, tomato and may.
